This happens due to the presence, in the millstones, of surface layers with a lower level of hardness than the underlying material which therefore causes a lower resistance to repeated stress. On the contrary, however, the martensitic microstructure of the FOOD FRIENDLY® burrs makes them less subject to wear and contamination, and therefore more resistant during the manufacturing processes.
